Recipe: Beetroot and orange salad

Ingredients:

1 beetroot, cooked, peeled and drained
1-1/2 cup boiled rice
4 oranges
Salt to taste
Black pepper to taste

Dressing

1/2 tsp orange rind, finely grated
1 garlic clove, crushed
1 tbsp mustard powder
2 tsp honey
4 tbsp yoghurt





Method:
Slice the top and bottom off each orange.
Remove the skin and pith.
Holding the orange over a bowl, carefully slice the segments.
Collect the juice in the bowl and leave to chill.
Place the segments in a separate bowl.
Dice the beetroot into small cubes, mix with the orange segments and leave to chill.
In a bowl mix rice with orange juice and season with salt and pepper.
In a salad plate spoon over rice and top with the beetroot and orange mixture.
Mix all the dressing ingredients together and spoon over the salad or serve separately in a bowl.
